Kuttu Ki Puri is prepared with Buckwheat flour which is commonly known as kuttu ka atta. This dish is prepared during the fasts because many flours and cereals are not eaten during the fasts as per the rules. Kuttu atta is devoid of gluten so it cannot be kneaded with just water. To bind the flour, aloo (potato) or arbi is used to knead the atta. Adding mashed potato to the dough also makes the poori more crispy and delicious.
Today we will make kuttu ke atta ki poori for Navratri Vrat. We have used aloo in our preparation.
As the flour generates warmth in the body, it is good to take it with some curd or raita.
